Lamb Rogan Josh Risotto: Imperfecto’s Making The Perfect Indo-Italian & You Can Too!

Italian meets Indian in this very creamy, deliciously decadent risotto. You’d think at first how the two can exist together in a dish, but you’ll be surprised at how great the combination is. Try this Lamb Rogan Josh recipe from Imperfecto right away. We’re telling you, you’re going to love it!

Ingredients

For The Risotto

100g arborio rice

15g unsalted butter

30ml white wine

1g saffron

500 ml chicken stock

Salt and freshly ground black pepper to taste

1 slice toasted garlic bread roasted

For The Lamb Rogan Josh

300g mutton

300g onion

150g tomato

5g ginger garlic paste

1 tablespoon degi mirch

½ tablespoon garam masala

5gm whole spices (bay leaf, green cardamom, cinnamon stick, cloves, black peppercorn)

100ml refined oil

Seasoning

Method

For The Risotto

  • Sautée the onion and garlic in the butter in a frying pan. Stir in the rice for 1-2 minutes.
  • Add the wine and stir until the wine has evaporated. Add saffron.
  • Add the hot stock, a ladleful at a time, stirring until each addition is almost completely absorbed. Once all the stock has been added, the rice should be tender and creamy.

For The Lamb Rogan Josh  

  • Pour oil and add all the whole spices.
  • Add onions and fry till it’s golden brown in colour.
  • Add mutton and cook till the pieces are firm.
  • Add ginger garlic paste, seasoning, and other spices.
  • Now add tomato puree and cook till the mutton gets tender.
  • Toss with the risotto.
  • Serve hot with a slice of toasted garlic bread.
